The fan's own control. Viking hoods give the lights and the blower separate switches or knobs, so the fan switch or speed control can fail while the light switch beside it carries on working.

Where the blower lives matters too. On many Viking hoods it sits in the canopy, above the filters. The larger professional hoods can instead drive a unit fitted along the duct or outside on a wall or roof.

Work the fan control the way your model expects
Some Viking hoods pair a fan on/off switch with a separate speed knob. The 5 Series professional hoods use one knob that pops out when pressed and turns up from 0 to 5. Try every speed, not only your usual one.

Listen at top speed, then switch off
Stand under the hood for a few seconds with the fan at its highest setting. Note a hum with no draught, or nothing at all, then turn the fan off rather than leave a stuck motor straining.

Try once more when everything is cold
If the fan quit partway through cooking, leave it off until the hood and cooktop are fully cool, then try each speed again. Whether it restarts cold is worth passing on.
